Ingredients
1 pound ground pork
1 tsp sesame oil
½ C scallions, sliced (white and greens separated)
1 14-oz bag of coleslaw mix
3 cloves garlic, minced
2 Tbsp low-sodium soy sauce, or coconut aminos
2 tsp rice vinegar
1 Tbsp ground ginger
Red pepper flakes (optional)
For sauce
¼ C mayo
2 Tbsp garlic chili paste
⅛ tsp salt
Sesame seeds, for garnish
How you make it
Heat a large saute pan over medium-high heat. Add ground pork, sesame oil, and the whites of the scallions into the pan. Cook, stirring frequently, for about 5 minutes or until the pork is ground.
Add scallion greens, coleslaw mix, garlic, soy sauce, rice vinegar, and ginger to the pan and cook for another 3-5 minute (until the cabbage is just tender. Add red pepper flakes, if using.
Whisk together mayo, garlic chili paste, and salt.
Split the meat and veggie mixture among four bowls, drizzle sauce on top, and garnish with sesame seeds.
*note: it's a little spicy, so hold the garlic chili paste if you don't like the spice
