This delicious appetizer recipe is a crowd pleaser! It’ has a moderate amount of protein, fat, and fiber - dipping some sourdough bread as well as roasted veggies makes it a flavor bomb AND a blood sugar stabilizing app to bring to the party.
Pumpkin Whipped Feta Dip
1 C pumpkin puree, canned unsweetened
¼ C plain Greek yogurt
1 8 oz block feta cheese
1 sprig fresh thyme
1 Tbsp honey or maple syrup* (plus some for drizzle)
½ C walnuts
* I like to use sugar free maple syrup!
Dippers:
Crusty sourdough bread (lower glycemic than regular bread), toasted
Roasted carrots
Roasted cauliflower
Raw veggie crudites
How to make it
Add feta and Greek yogurt to the food processor and blend until smooth.
Add honey/syrup and pumpkin puree, blend until smooth.
Spread in a bowl, and top with thyme, walnuts, and a drizzle of honey/syrup
Use prepared dippers
