20-minute Shrimp Fajitas

What you'll need


1 1/4 lb peeled and deveined raw large shrimp

1 red bell pepper

1 orange bell pepper

1 sliced poblano pepper

1 sliced red onion

3 Tbsp olive oil

1 Tbsp chili powder

1 tsp ground cumin

1/2 tsp salt

1/2 tsp coriander

3/4 C Greek yogurt

1 Tbsp chopped jalapeno

1/4 tsp lime zest

1 Tbsp lime juice

1 tsp garlic, minced

12 small corn tortillas


How to make it


  1. Preheat oven to 400 degrees F.

  2. Toss together shrimp, bell peppers, pablano, onion oil, chili powder, cumin, coriander, and a dash of salt. Place on a baking sheet lined with tin foil.

  3. Bake 9-10 minutes, and pick shrimp off. Place them in tin foil to stay warm.

  4. Meanwhile, stir together yogurt, jalapeño, lime zest and juice, garlic, and pinch of salt in a small bowl.

  5. Turn broiler on high and broil veggies for 3-4 minutes longer.

  6. Meanwhile, warm the tortillas on a skillet for 1 minute each side.

  7. Spread sauce on tortillas and top with veggies and shrimp.
