How to stabilize Blood Sugar at Breakfast for Type 2

Does breakfast get boring for you? Have your meals gotten monotonous?

Maybe you can’t stand the thought of another hard boiled egg for the rest of your life

Keep in mind that breakfast doesn’t have to be a typical “breakfast” food.

This quick, easy breakfast recipe that adds pizzazz to your morning WITHOUT taking up too much time.

And the great news? There’s a controlled 10 grams of carbohydrate and 2 grams of fiber per tortilla. Alongside the protein and fiber of the veggies, this is a power house breakfast.


Breakfast Tacos (serves 1)


2 eggs

Sprinkle of salt and pepper

1 roma tomato

1/2C spinach or kale*

2 Tbsp feta cheese

2 corn tortillas

2 Tbsp Greek yogurt, optional

Hot sauce of choice, optional


  1. Dice tomatoes, rip spinach into bite size manageable pieces, beat eggs in a bowl with salt and pepper.

  2. Scramble eggs in a skillet. When eggs are almost finished, add spinach.

  3. Heat a small skillet over medium-high. Add each tortilla for about 30 seconds each side.

  4. Place 1 Tbsp of Greek yogurt on each tortilla. Top with eggs, tomato, feta, and hot sauce if desired.


*If using kale, sauté in a teaspoon of oil OR 1 tsp balsamic vinegar in the skillet as you're preparing your eggs and cutting the tomato. Kale is a hearty green, so it needs to soften a bit longer.
