Ugh…I should just have a salad. But it’s so boring to eat salad all the time.


THINK AGAIN!


This salad is made for the pasta lovers, with a 1/2 C of whole grain rotini. Just enough carb to balance your meal and keep your energy up through the afternoon.



 


Cook 1/4 box 100% whole grain rotini

Buy a large salad mix

Chop up cherry tomatoes

Drain a can of chickpeas

Add feta cheese


Top it all with dressing: 3 Tbsp red wine vinegar, 2 Tsbp olive oil, dash of salt, minced onion if you’d like. Mix these ingredients in a tightly close container and keep for up to a week for peak freshness.


Assemble to enjoy now, or put it in a jar to enjoy in the next couple days.
