Cottage Cheese Caprese



Look forward to your afternoon snack. This fun recipe is a perfect mid-day pick me up. The protein keep you full and satisfied, and your blood sugar steady.


Simply put 1/2 C of low-fat cottage cheese into a bowl. I choose low-fat or fat-free cottage cheese here to ensure moderation, because we are adding olive oil to the recipe.


Drizzle with a small amount (about 1 tsp) of olive oil and balsamic vinegar on top. Add a few sliced cherry tomatoes, and 2-4 sliced basil leaves.
