Mini Quiches - Easy Low Carb Breakfast for People with Type 2 Diabetes

Do you ever skip breakfast? Maybe you overslept, feel like you don't have time, or straight up don't know what to eat that won't spike your blood sugar.


This super easy, prep-able meal will ensure that you never leave the house without breakfast again.


Packed with fiber and protein, these mini quiches make an easy, healthy start to your morning. They can also work as a great snack!


What you'll need

  • 10 eggs

  • ¾ C shredded cheddar

  • Salt and pepper to taste

  • Optional mix ins include: 1 small onion, ¾ C shredded cheddar, 4 oz mushrooms, 2 C baby spinach, turkey slices, ½ C diced tomato, etc.


How you make it

  1. Sauté any veggie add-ins in a small amount of oil (such as onion, mushrooms)

  2. Beat eggs and add salt/pepper to taste

  3. Add mix-ins to a greased muffin tin

  4. Add about 1 Tbsp cheese to each muffin cup

  5. Pour egg mixture until about 2/3 full

  6. Bake at 375 for 13-20 minutes


Great for reheating through the week!


Store in the fridge up to 5 days. Toss 2 mini quiches in the microwave for 30 seconds before you walk out the door, add an apple to your bag, and you've got a wholesome, balanced, on-the-go breakfast that will keep you feeling nourished through the morning.
