This healthy snack looks fancy but is so EASY, really FAST, and DELICIOUS 😋
Peaches provide lots of fiber, mozzarella provides protein and fat, making this snack filling and stabilizing.
Here's what you'll need:
2 peaches
4 oz ball of fresh mozzarella
5 fresh basil leaves
1/4 C white balsamic vinegar
1/8 C olive oil
Dash salt and pepper
Here's what you'll do:
Mix oil and vinegar in a jar. Seal and shake well. Refrigerate until chilled (you can keep it up to 1 week). Slice peaches into 1/2 inch wedges and remove core.
Slice mozzarella into 1/4 inch pieces.
Arrange on a plate; add a dash of salt and pepper, and basil leaves.
Top with a drizzle of the oil and vinegar dressing.
Makes 2 servings.
